What is a Beef on Weck?

A beef on weck is a regional roast beef sandwich originating from Buffalo, New York, in the late 19th century. It is considered one of Buffalo's "big three" culinary specialties alongside Buffalo wings and sponge candy. 

What does the sandwich consist of?

The Kummelweck Roll: The sandwich's namesake ("weck" is short for kummelweck) is a Kaiser-style roll topped with coarse kosher salt and caraway seeds. "Kümmel" is the German word for caraway, and "weck" means roll.

The Beef: It features slow-roasted, thinly sliced roast beef, which is traditionally served rare to medium-rare.

The AuJus: The meat is typically dipped in or served with au jus. A common tradition is to dip the cut face of the top bun directly into the warm jus before assembly.

Horseradish: The sandwich is almost always served with a healthy dollop of pungent horseradish spread on the top bun to provide a "zing" that cuts through the rich beef.
